As the spring arrives and color comes back into my life, I love to reflect that in my baking and kitchen endeavors. Anyone who knows me closely, knows how deep my love of Earl Grey tea is in my sweets. If you are not familiar with its taste, it is pleasantly floral and pairs beautifully with cream and honey. It is not overwhelming at all, but it is strong enough to make you feel like you're eating something from an ethereal story book. I loved the idea of making a bright pink tiramisu, that tasted like a cherry- flower bomb. This is where my idea of using Earl Grey tea infused sweetened milk, and morello cherry preserves throughout the layers.

In this recipe, I used store-bought lady fingers and soaked them in a combination of my sweetened EG sweetened milk and cherry preserves. For the traditional mascarpone layer, I used cream cheese. I find it is more accessible and affordable with little to no taste/ texture difference. More cherry preserves and that sweetened milk into the cream cheese/ sugar mix is our beautiful fluffy pink layer. I layered it twice, topped it with some crushed graham crackers (or extra lady fingers) and made a cherry buttercream to pipe it on top. I think some rum-soaked cherries on top would really make this 100/10.

What You'll Need:

  1. One package Lady Fingers (I used Goya)

  2. 1 package cream cheese (room temp)

  3. 1 cup powdered sugar

  4. 1 cup cherry preserves

  5. 1 1/2 cup milk

  6. 2 bags Earl Grey Tea

  7. 1 tbsp granulated sugar

    Cherry Buttercream:
  8. 3 cups powdered sugar

  9. 1 stick butter (softened)

  10. 1 tsp vanilla extract

  11. 1/3 cup cherry preserves

  12. 1/2 cup heavy cream

Make the Earl Grey

x Cherry Tiramisu:

  • Make your Earl Grey sweetened milk:

    • Pour your milk and 2 bags of tea into a sauce pan over low heat. Warm up your milk and tea, adding your sugar and stirring. Take off heat before it starts to simmer and allow to steep 30 minutes. Pour into a glass jar, keeping the tea bags in the milk, and refrigerate for 2 hours.

  • Once your Earl Grey milk is ready to use, you can start our cherry cream cheese layer.

    • In a large bowl, add your cream cheese, powdered sugar, and cherry preserves. Add 3 tbsp Earl Grey tea milk, and beat with a hand mixer on high about 2 minutes. It should be fluffy and pink!

  • Prep the tiramisu/ the lady fingers:

    • In an 8x8 round/ square pan, pour 1/2 cup Earl Grey Tea milk, and 1/3 cup cherry preserves. Mix with a whisk to incorporate. Dip each side of the lady finger into the cherry milk and lay them tightly next to each other. It should cover the bottom of your pan.

  • Layer the Tiramisu:

    • After you have laid your lady fingers in the cherry/ Earl Grey milk, top your lady fingers with half of your cream cheese layer. Cover the lady fingers completely.

    • Repeat the process once more.

  • Refrigerate 1 hour.

  • Make the Cherry Buttercream:

    • In a large bowl, combine your softened butter, powdered sugar, vanilla, and cherry preserves.

    • Using a hand mixer, beat on medium speed and slowly add 1/2 cup heavy cream until fluffy/ frosting consistency. About 2 minutes on high.

    • Pipe little dollops onto the cold tiramisu, creativity can happily take over here!
