Orange-Berry Morning Loaf

An easy, sweet and bright way to start your morning. Need an excuse to use some Sourdough Discard? This is the perfect one. I use some frozen berries and the zest and juice of an orange.. so it's basically salad. Top it with a buttery crumble, and enjoy your morning tea or coffee.
This is a beautiful recipe because you can vary the berries to whatever season you're in, and the orange can be subbed for a lemon! I also personally feel accomplished when I use the discard for a delicious, shareable!

What You'll Need:
1 orange (zest half, juice of whole)
1 cup granulated sugar
1 cup of frozen berries
1 tsp baking powder
3 eggs
1 stick of unsalted butter (melted and cooled)
1 1/2 all purpose flour (1/4 cup extra to coat berries)
1/4 cup milk (I use whole)
1/4 cup vegetable oil
1 TB vanilla
1 tsp salt
2/3 cup sourdough discard
Crumble Topping:
5 TB butter (softened)
1/3 cup brown sugar
1 tsp flake salt
1/2 cup flour
Equipment:
8x8 pan
parchment paper
whisk and rubber spatula

Let's Make It:
Preheat your oven to 350°F
Add your sugar, your orange zest, and orange juice to a bowl and mix well together.
To the bowl with your orange-sugar, incorporate your melted and cooled butter. Next add your eggs, oil, milk and sourdough discard. Mix until smooth and set aside.
In a separate bowl, add your flour, baking powder and salt. Whisk lightly to make sure all ingredients are evenly distributed.
Slowly incorporate your flour mixture into your wet ingredients. The batter should be relatively thick. Set aside and make your crumble topping.
For the crumble, mix your softened butter, brown sugar, flour and salt together with a fork. The fork helps make those crumble sizes differentiate.
Top your batter with the crumble and bake for 55 minutes.
